After harvesting, the pepper berries are placed in sacks while the pericarp, or outer layer, ferments. It is rinsed and changed several times. Once the pericarp is removed, the remaining white peppercorn has a concentrated bite.
Our white pepper is unbleached and still retains a slightly off-white hue.
White pepper is the perfect addition of hotness without changing or overpowering the flavor of your dish.
Dark berries pack an aromatic punch with citrus and pine flavors and quite a bit of heat. These berries are picked while young to retain a sharp, hot flavor.
